This has to be one of the tastiest veggie dishes we have made! The spiced beetroot’s earthiness goes fantastic with the sour cream and salsa. A dish you, your friends and family can enjoy. Try something different to your typical tacos and use beetroot!



Ingredients  (serves 2-3):

  • 300g steamed beetroot
  • 1 tsp cayenne pepper
  • 2 heaped tsp ground cumin
  • 1 heaped tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1tbsp olive oil

For salsa:

  • 1 small onion (finely diced)
  • 5 cherry tomatoes (diced)
  • small handful of fresh coriander (finely chopped)
  • juice of half a lime


  • 6 soft shell tacos
  • sour cream
  • avocado


  1. Preheat the oven to gas mark 5/190°C/375°F
  2. Dice the beetroot into small cubes and then mix well with the rest of the ingredients.
  3. Bake in the oven for around 20-25 minutes.
  4. Prepare the salsa by mixing the ingredients together. Slice the avocado and warm up the tacos.
  5. Serve with sour cream!
