Getting together for food with family and friends has to be one of my favourite things to do. Whether its a big occasion, a catch up or just enjoying some time with your loved ones; for me these moments always involve food andĀ drink. A quick pint down the pub, dinner out or most importantly a home cooked meal around the table. For me the best dinners are the ones where you can all help yourselves to all the different elements. A prime example of this is chicken fajitas; grab a wrap and load it up with chicken and peppers followed by a dollop of sour cream and the rest of your desired toppings. There is nothing more satisfying and for some reason a meal like this keeps the family talking, rather than sitting there staring at their plateĀ in silence!

With this in mind, I wanted to think of something that could replicate those fajita dinners but with different ingredients. This is when the light bulb moment hit me! Chicken katsu curry – fajita style! Sliced breaded chicken with that amazing sauce, followed by some shredded lettuce, carrot and spring onion to throw on top! It worked so well and my family loved it, so you should give it a try too!

I didn’t create my own recipe for the curry sauce as it’s been done a million times over and it’s great just the way it is. You can find tons of recipes all over the internet. All I would suggest is that you make sure the sauce is nice and thick to have in your wrap, as you don’t want a runny sauce going everywhere. I chopped up all of my salad bits and placed them into individual bowls and then made a dressing from equal measures of runny honey, toasted sesame oil and a Japanese rice vinegar (this dressing is great using chinkiang vinegar too). Season the dressing with salt and pepper to taste and then coat the carrots, spring onions and lettuce. That’s it really, now heat your wraps, load up and chow down!


What you will need

  • Katsu curry sauce (buy from shop or make your own)
  • 6 breaded chicken fillets (sliced into strips)
  • 8 spring onions (cut into thin strips)
  • A large carrot (cut into thin strips)
  • 1 ice burg lettuce (shredded)
  • White tortilla wraps

Ingredients for salad dressing

  • Runny honey (equal parts)
  • Japanese rice vinegar (equal parts)
  • Toasted sesame oil (equal parts)
  • Salt and pepper
