Spooky season has arrived what better way to enjoy a little trick or treat sweet than with our Halloween zombie blondies!

Blondies, if you’ve not heard of them before, are a fairly new addition to the world of baking. They are the sister of the brownie, and use white chocolate instead of milk or dark. This is what gives them their pale and blonde appearance. They are slightly sweeter, as white chocolate is the sweetest of the bunch, but they still boast a gooey texture and moreish flavour.

The best thing about these zombie blondies? You don’t need to be super creative or amazing at cake decorating to achieve a fantastic end result!

The zombie heads are made using halved strawberries dipped in melted white chocolate that’s been dyed green. SO simple but really effective! We used white chocolate chips with black food colouring for the eyes and other features. As each zombie is be different, you can go as crazy as you like when decorating their little faces.

We used a tiny paint brush and gel food colours. Pour a tiny amount of the gel colour onto a plate and then simply paint the features on once the white chocolate coating is set. We’d also recommend making more strawberries than you need so you can practice a little.

Equipment

Ingredients

  • 140 g butter unsalted
  • 300 g white chocolate
  • 220 g caster sugar
  • 2 eggs large
  • 120 g plain flour
  • 100 g raspberries
  • 6 strawberries halved
  • 1 tsp green gel food colouring
  • 1 tbsp black gel food colouring for painting
  • white chocolate chips between 24-30

Instructions

FOR THE BLONDIES

  • Preheat the oven to 180C/160C fan/gas 4.
  • Use baking paper to line a cm baking tray and grease with butter.
  • Measure 100g of white chocolate and roughly cut into small chunks. Put to one side.
  • Take another 100g of white chocolate and melt in a pan over a bowl of simmering water with the butter. Once it is all melted and combined, remove from the heat and beat in the sugar.
  • Leave to cool and then beat in the eggs.
  • Fold in the flour and gently stir in the raspberries and white chocolate chunks. It doesn't matter if the raspberries break up or get squashed slightly.
  • Bake for 25-30 mins. They should feel squidgy and gooey to touch once removed from the oven. Remove to cool on a wire rack. Once completely cooled, cut into 12 squares.

FOR THE DECORATION

  • Slice 6 strawberries in half and put to one side.
  • Add the green food colouring and the remaining white chocolate to a bowl over a pan of simmering water and melt. It's important to add the colouring at the start, before the chocolate has begun to melt, as adding any liquid to melted white chocolate can cause it to seize (go lumpy and hard). This step can also be done in the microwave. Just add the ingredients to a microwaveable ramekin and heat in short bursts, stirring regularly, to ensure the chocolate doesn't burn.
  • Once the chocolate has melted stir well to ensure the green food colouring is fully incorporated. Dip the strawberries into the mix so the strawberry is covered on the top side. Place in the fridge for 20 minutes or until the chocolate is fully set.
  • Remove the strawberries from the fridge and begin decorating. Using white chocolate chips for eyes, attach these by melting the flat side of the chocolate chip, just a little. We found the best way to do this was to fill a mug with boiling water, and then gently place the chocolate chips o outside of the warm mug. This caused the chocolate chips to melt enough to stick to the strawberries.
  • Squeeze a small amount of black gel colouring onto a plate and dip your paintbrush in the food colouring to then decorate the eyes and other features.
  • Using some of the left over melted chocolate mix, which you coated the strawberries in (you may need to reheat this), place a small amount on the centre of each blondie square and fix the strawberry zombie head to it to secure it in place.
  • Repeat for all 12 strawberry halves and enjoy!
